Vanilla chia pudding is a creamy and nutritious dessert that’s perfect for a low-carb lifestyle. Made with chia seeds, unsweetened almond milk (or coconut milk), and vanilla extract, this pudding is rich in healthy fats and fiber while being low in carbohydrates.

Ingredients
  • 3 tbsp chia seeds
  • 1 tbsp hemp seeds
  • 1 tbsp monk fruit
  • 1 tsp vanilla extract
  • 1 cup almond milk
Instructions
  1. Pour all ingredients into a jar.
  2. Stir well with a whisk or fork and let sit for 2 minutes then stir again.
  3. Refrigerate for 3-4 hours or overnight.
  4. Add any toppings you desire (nuts, berries, coconut flakes, chocolate chips, etc.) and enjoy.
