Instructions
-
Set your Crockpot/Instant Pot to Sauté setting (or use your stovetop skillet if your slow cooker doesn't have this setting) and brown the ground beef, breaking it up with a spoon. Add chopped onion, minced garlic and a pinch of salt while browning to enhance flavor. Continue cooking until the beef is fully browned and onion is softened.
-
Change the Instant Pot setting from "Sauté" to "Slow Cook."
-
Add bone broth, diced tomatoes, tomato sauce, chili powder, ground cumin, onion powder, garlic powder, smoked paprika, and dried oregano to the slow cooker. Stir to combine.
-
If using riced cauliflower, add it to the slow cooker at this time.
-
Cover and cook on low for 4-6 hours or on high for 3–4 hours.
-
After cooking, taste the soup and adjust seasonings as needed, adding more salt, pepper, or spices to taste.
-
Serve hot, topped with your choice of shredded cheese, sour cream, avocado slices, fresh cilantro, sliced jalapeños, and lime wedges for extra flavor.
