1cup almond flour
1/4cup coconut flour
1/4cup psyllium husk powder
1/2tsp salt
1cup hot water
1tbsp olive oil or melted coconut oil
Instructions
In a large mixing bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt until well combined.
Pour the hot water and oil into the bowl. Let it sit for a few minutes; the psyllium husk will absorb the water, making the dough easier to handle.
Divide the dough into 6–8 balls, depending on the size you want. Roll each ball between two sheets of parchment paper to about 1/8-inch thickness.
Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and cook for 1–2 minutes on each side, or until golden brown spots appear.
Let the tortillas cool slightly before serving.
